White rice starch: extraction, and chemical and structural characterization

Abstract
Different kind of starches, such as corn and cassava starch, have been used on the development of biomaterials. Thus, the aim of this research was to extract and characterize the starch from white rice grains, to evaluate the possibility of its use in edible and/or biodegradable films and coatings. Starch was extracted and characterized. White rice starch extraction presented the yield of 44.05%. High values of carbohydrates indicates the purity and/or efficiency of extraction, as starch is a carbohydrate, and the white rice starch obtained on this research have presented 90.75% of carbohydrates. Based on the obtained results, rice is an indicated raw material for starch extraction, presenting high yield and purity. Furthermore, the granules have presented small size, and angular and polygonal shape. Also, white rice starch can be a source of phenolic compounds
