The objective of the present work is the study in green beans of vitamin C content and conservation as a quality parameter of this product.
Specifically, we make a reference to variation of this parameter depending on the product variety and throughout its cultivation period.
Vitamin C is determinate by volumetric analysis with DCPI reactive as a routine analysis method.
Results show significantive differences between both varieties and prove the weather importance on the studied paramenter variation.
